Having a large family, I often seek inexpensive meal ideas and prepare large batches.  Next to pancakes, a family favourite in our home is waffles!  I love that you can hide extra nutrition and protein in the batter and the kids still devour them.  Protein packed waffles are a delicious, filling meal my kids just love – and they’re super easy!  Nothing beats homemade!

Protein packed waffles
I like to make a double batch on the weekend and freeze what is left.  Throughout the week, we pop them into the toaster and it provides a quick, healthy meal the kids enjoy.

Protein Packed Waffles
Makes approx. 2 dozen

  • 1 ½ C flour
  • 1 scoop of protein powder
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. cinnamon
  • ½ tsp. nutmeg
  • pinch of salt
  • 2 C non-dairy milk + 2 tbsp. of lemon juice (let sit for 5 mins) – in place of buttermilk
  • 2 tbsp. ground flax + 6 tbsp. water (let sit for 5 mins) – in place of 2 eggs

Combine all ingredients and prepare in waffle maker.
