Pancakes are a favourite in our home!  I was never a fan of them growing up but once I met my husband, that began to change.  When the kids came along, he started a pancake-lunch-tradition on his daddy daycare days.  Needless to say, I was outnumbered and had to get on board with this pancake love.  I started tossing healthy ingredients into the mix to increase the nutritional value.  Before long, pancake poppers were born!

I used my babycakes cake pop maker to make these delicious pancake poppers.  They’re brown and crispy on the outside and soft and fluffy on the inside.  Of course, if you don’t have a cake pop maker, you can make these the traditional way (in a frying pan) and they’ll still taste great!

I use this recipe as my base:

1 cup flour
2 tbsp. baking powder
1 egg replacer
1 cup almond milk

Next, depending on what I have in my pantry, I add in some of the following:

  • 1 scoop of protein powder
  • 1 tbsp. ground flax
  • 1 tbsp. hemp hearts
  • ¼ cup yogurt
  • handful of leafy greens
  • ¼ cup fresh fruit or a banana
  • pinch of cinnamon & nutmeg

Add ingredients into the blender and blend until smooth.
By pouring the batter into the cake pop maker, you can enjoy these delicious pancake poppers!
Serve with pure maple syrup and enjoy 🙂

  3. I love this idea!! I am a big pancake lover, we have pancakes every Saturday but this sounds like a fun way to mix it up and especially throw in some extra yummy goodies and they would never know.
