This is the perfect summer salad! It’s excellent to have at a barbecue or bring to a potluck.  I also like to make this delicious sweet vanilla quinoa salad when I’m preparing a meal for someone because it’s the kind of dish everyone enjoys. It’s hearty and filling with just the right amount of sweetness.

Sweet Vanilla Quinoa Salad

Quinoa is a superfood that is high in protein, full of nutrients, vitamins and antioxidants.  It is gluten-free, low in fat and has been known to help with migraines.  This sweet vanilla quinoa salad is quick and nutritious and will leave you wanting more!

Sweet Vanilla Quinoa Salad Recipe

Ingredients

1 C quinoa*
½ red pepper, finely chopped
½ C cucumber, chopped
1 shredded carrot
3 green onions (scallions)
2 tbsp. sunflower seeds
1 tsp. black sesame seeds
2 tbsp. grapeseed oil
1 tbsp. agave
1 tbsp. apple cider vinegar
1 tsp. vanilla

Preparation

1.  Prepare quinoa and let cool
2.  Add chopped veggies to quinoa
3.  Toss in sunflower and sesame seeds
4.  Mix oil, agave, vanilla and apple cider vinegar for dressing
5.  Pour dressing over salad and mix
6.  Store in fridge
